Sweet red peppers and aubergines: Eat them fresh or dry them out, no refrigeration or freezing needed. They are delicious when stuffed, and folk cultures have long known what we seem to have only recently discovered: The brighter the colors, the better for your health. As for aubergines: We know them as eggplants. [2014]
